Ingredients:
2 cups SRF
1 cup white sugar
1/2 cup choc chips
1 mashed banana
1 egg
1/2 cup milk
2/3 cup sour cream
2 Tbsp oil
Method
Combine dry ingredients.
Add the mashed banana and stir to combine.
In a different bowl, mix milk, egg, oil and sour cream.
Combine wet and dry mixtures and stir until just combined.
Spoon into lightly greased muffin pan.
Bake at 200 degrees C for 20 minutes.
Alternative: use brown sugar instead!
Serve with cream whilst still warm…
I’m so glad you like it, Helen! I’ve been using white choc chips and some nutmeg lately. Sometimes I use half a cup of sour cream and half a cup of milk instead of a cup of milk. It adds more moisture. Aren’t they yummy!? And so easy :) xx
Just put my second batch of these in the oven … Thanks for the recipe – such a yummy way to use up a banana which is nearing it’s use by date :-)
