More pumpkin

I know. It’s exciting.

I have finally cooked up the rest of my 6+kg pumpkin. Pumpkin bread, pumpkin muffins and roasted pumpkin with our roast beef dinner.

Mix 2 cups SRF, 1 cup sugar and 1/2 cup dried fruit (eg chopped dates, sultanas, cranberries) or choc chips (or both)

In a separate bowl, whisk 1 egg, 1 cup milk and 2 Tbsp oil

Add wet ingredients to dry. Add 1 cup of mashed pumpkin. Mix, but not too much.

Spoon mixture into a greased muffin pan. Cook on high (200 degrees) for 10-15 minutes, so that peaks form and the muffin top breaks away slightly. They should be golden brown.

Serve warm! With butter!

Alternative ingredient could be sour cream instead of milk. Add 1 cup sour cream or 1/2 a cup each of sour cream and milk. Yummy!
