Zucchini fritters

It’s that time of year again! We are getting zucchinis daily. We have four plants and they are thriving! We are also growing lettuce, silverbeet, potatoes, onions, strawberries, garlic, pumpkins, beans, carrots, tomatoes and cucumbers, but the zucchinis are doing the best.

We also have a new BBQ that is sitting on our new deck. Each night we are cooking and eating outdoors. It’s great.

Last night I was very busy sitting in the sun on the deck, sipping wine and eating BBQ flavored potato chips whilst shopping for fabric online. Then monte joined me with a beer and a plate of fruit cheese. The older children were playing in their cubby house and the baby was asleep. I was thinking, ‘Hello! I love my life.’ I forgot to think about dinner. Our meal menu board has been forgotten since Christmas. I didn’t know what to cook. I wasn’t that hungry (after eating all those chips! And cheese!).

We wanted to cook and eat outside. We didn’t want ham (again) so we hunted and gathered zucchinis from the garden. I looked around on the web for zucchini fritters recipes and then we concocted this, whilst drinking our beer/wine and still nibbling on the cheese, and laughing and talking about things. Very romantic.

It occurs to me that this is a great recipe for using items from your own garden! Get the kids to literally pick/collect dinner!

Zucchini Fritters from Fangorn Farm
2 medium potatoes, washed and grated (skin on)
2 medium zucchinis, washed and grated (skin on)
2 carrots, peeled and grated
1 medium onion, diced finely
1 cup self raising flour
2 eggs
Seasoning (we used Moroccan [surprise!])

Combine all ingredients
Roll into patties
Grill on the BBQ, about 7 minutes each side. You could also shallow fry them. Or you could grill them on an electric grill.

Makes 10-12 burger sized patties

You could add some of your Christmas ham too but we try to eat at least one vegetarian meal per week.
