Salmon patties

We went out for a picnic tea with some friends earlier in the week. I made a quiche and some salmon patties, and took some sliced vegetables and chocolate cake as well. I love picnics! I love preparing the food and getting a picnic basket and packing it with goodies. On the way to the picnic, Ella sang in her quiet little sing-song voice (on the way home she kept saying ‘shupup’ to everybody, and grinning cheekily).

I made these salmon patties with Atlantic salmon fillets. It felt a bit strange using my favourite fish in a patty like this, but I wanted to make some nice patties. I love making patties! Lentil patties, tuna patties, beef patties, vegetable patties, tofu patties, turkey mince patties etc etc – they are so good to make and even better to eat, with a crisp salad. I thought I’d share this recipe with you today.

Salmon patties

ingredients
2 small fillets of Atlantic salmon – about 300g
6 slices of whole grain bread
1 small onion, diced finely
2 Tbsp horseradish cream
2 Tbs capers, sliced finely
Ground sea salt, to serve
Juice of half a lemon, to serve.

method
::Grill fillets of fish and remove skin. Set aside.
::Soak the slices of bread in water and squeeze dry.
::Crush the cooled salmon and place in a bowl with the soggy bread. Don’t mix yet.
::Add the onion, capers and horseradish and mix the ingredients thoroughly with your hands (it is easier if your hands are wet).
::Roll patties into tight balls. As this recipe does not use an egg, having tight balls will help. Crush the mixture; the bread should help to hold it together.
::Grill them until they are cooked through. Allow the patties to flatten when cooking.
::I used our electric grill for this. It’s like a sandwich press, and it is great for removing excess fat. Just make sure you spray the grill well, to help to avoid sticking!
::Serve the patties with a sprinkling of salt and a squeeze of fresh lemon juice
