I’m back.

I’ve decided to give my blog a facelift and start writing again.

Now that I’ve worked out how to log in (it has been a while), I’ll leave you with this post, which I wrote on January 18, 2016, and left in draft mode for over two years. I don’t know where the photos have gone; maybe I’ll add some later.

It’s a bit of a treat, granola. It’s fatty and sugary – but oh so yummy. Plus it’s easy peasy lemon squeasy to make!

This morning I took the children to the local park for a breakfast picnic. I wanted to get out of the house before it the day heated up too much, and I needed to get the children out of the house because Monte was giving a talk on something for work.

I love my big tipshop basket. I’m a fan of baskets. I have a collection of them – most are gathering dust. I love throwing things into my basket for picnics. We took milk and cereal, including granola that Elora helped me to make last night, plus water and fruit. The kids brought a book as well, so after eating and playing we all sat under the tree reading, which was blissful! We left once it was getting a bit warm, just when the council worker turned the sprinkler on the grass next to our picnic rug.

I am not ready for the holidays to end. I am ready for the kids to go back to school though, and I think they are ready too, but I am not feeling ready to work again just yet. Hopefully, once I am in a routine, life will flow nicely!

Speaking of work, I think this granola will make a nice snack to munch on throughout the day. I think it would be particularly delicious with some stewed fruit, and a hot cup of tea.

 

 

Ingredients

 

  • 3 cups rolled oats
  • One cup shredded coconut
  • 1/2 cup coconut oil
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1 cup chopped nuts/seeds
  • 1 cup chopped dried fruit (optional)

Method

  • Preheat oven to 180*C
  • Mix all ingredients, except dried fruit (I prefer to add it at the end)
  • Place mixture on a large baking dish, spreading it out so it makes a thin layer
  • Bake mixture for about an hour, until fragrant and golden brown, stirring half way through.
  • Allow to cool completely and dry out before adding dried fruit.
  • Store granola in an air tight container
  • Serve with milk and/or fresh fruit, as a topping on yogurt or fruit crumble, or as a mixture in or on top of cakes and muffins.
