Last weekend it was 11 degrees outside at lunchtime. However, it was a beautiful sunny day and we decided to make some cheese scones for our lunch. The recipe is easy (we doubled it so we had – errr – leftovers).
2 cups SRF
a bit of baking powder
1/2 cup grated cheese
tbsp mixed herbs
chives from the kids’ rooms
Rub butter into flour. Add grated cheese and herbs. Mix in the milk with a knife. Knead on a lightly floured board. Shape into a rectangle about 2-3cm thick. Cut into squares or rounds. Place onto a greased baking dish. Brush with milk. Bake in a hot oven for about 15 minutes (a hot oven gets the scones rising quickly; a cooler oven doesn’t get such a good rise).
The dining room was bathed in sunshine. It was very very warm. We sat there and ate our scones with butter softening and melting on the halves. Monte and I began to laugh when we realised we were wiping sweat off our brows! The children got up from the table and danced around in the sunshine wearing naught but their underwear. My baby kicked a bit. Perhaps it felt hot too! We had to start to fan ourselves with our serviettes. It was lovely, knowing that it was very cold outside and we were enjoying summer temperatures in the comfort of our new home!
