So easy to make, and so yummy to eat. I love them.

Plus, if you make your own, you know they are fresh and you don’t have the wrapping (ie rubbish) to deal with afterwards.

Ingredients
(Makes 8)

2 cups plain flour
1 tsp baking powder
1 tsp salt
2 Tbsp olive oil
1 cup water

Method
Mix dry ingredients with olive oil until it looks crumbly.
Slowly add water whilst mixing (we use electric mixer on speed 4/10)
When mixture becomes soft, smooth and supple, roll into a ball, cover and leave to rest for 30 mins (I often leave mine for longer than that)
Roll dough into an even tube shape and cut into 8 even segments
Roll each segment into a flat circle, as thin as you can
Cook each tortilla separately in a dry frying pan on medium heat. Once the tortilla is bubbling, turn it over and cook the other side. Should be around 2 minutes per side.
Serve warm.

These are great for chicken wraps, tacos, yiros, etc. Also great just plain, cut into segments and served with dip. There’s a lot you can do with a tortilla!

You can easily flavour these with herbs. Have fun experimenting!
